I went to the store and bought a couple of Tilapia filets and put on some basmati rice. I turned the oven on to 375.
I cleaned and chopped the leeks and sauteed them in olive oil in a cast iron pan. After a minute, I added the tomatoes, then the corn and one chipotle pepper chopped fine and a tbsp of maple syrup (some honey or sugar works too - takes away the acidity of the tomatoes). Add the juice of 1/2 a lime.
Push the mixture to the sides of the pan, lay down the filets, and scoop the mixture on top of it and after it cooks for a minute, put it in the oven to bake.
Mix up a salad to serve with it and then watch FOUR stultifying hours of season finales, knowing that your stomach is well-insulated from the guilt twinges of wasted time.
