Get down to the fishmonger's and get something like a rainbow trout and a small piece (about a large palm sized fillet) of smoked haddock or similar. You'd better get the trout gutted as I can't help you there. Wash it and wrap in lightly oiled foil, head, tail and all, and parcel up the haddock.

Bake these for around twenty-five to thirty minutes on about gas mark 6 or 400 Fahrenheit.

Back at the big pan, fry a couple of small onions in some olive oil and butter. When these are soft, add your washed but not peeled new potatoes. Mix them around a bit, then add 4 pints of water and four or five large cloves of crushed garlic. If someone's left white wine around, use that. Season, add a tiny bit of Tabasco and leave for say fifteen minutes, or until the potatoes are cooked.

When the fish is cooked, carefully get the fish of the bone and chuck in the pan when the potatoes are done. Keep the bits of fish as big as you can.

Gently stir in the chopped parsley, test for flavour and leave for a couple of minutes whilst you find something wholesome to listen to.
