tomato, green bean and aubergine soup I have developed this delicious soup to spite the soup taster, who has, in the past, suggested that an aubergine soup was not possible. It's a taut-t-shirter. We ate all of it between the two of us, but we are getting a bit chunky. Get this stuff together:
On the hot grill: Chop the stalk end off your aubergines and stick the knife down the middle without cutting them in half. Cram in the garlic and rosemary (feels all wrong) and wipe over with oil. Grill on a high heat until black and collapsing. Meanwhile, at the medium pan: Add your tomatoes to a bit of olive oil and cook on a gentle heat until your aubergines are ready. When the aubergines are black, get as much skin off as possible and throw them in with the tomatoes, adding the juice of a lime and some seasoning. Blend and return to the pan on a low heat whilst in yet another pan, you are cleverly preparing your green beans (these should take about seven to nine minutes). Dish out the soup, putting the green beans artfully on top. Feta cheese might be nice too. I'm really sorry about all the washing up. by: adele |
