tum It's cold. You need a stew and you need dumplings on it. Don't be put off by the long recipe - it's not as epic a quest as it might look, and it makes you feel good. It'll fill up four.

Extensive nutritional testing in the soup origination lab has given this a taut t-shirt rating.

In the very big wide pan with a tight-fitting lid:

Get four pints of water on the boil, then add something like:
  • One chopped onion;
  • About eight carrots;
  • Five big cloves of garlic, crushed or chopped;
  • Two heaped tablespoons of pearl barley;
  • Two generous slugs of Tabasco;
  • Two generous slugs of Worcestershire Sauce if you have some;
  • Two generous slugs of tamari;
  • Four dried bay leaves;
  • A teaspoon of honey if you have it;
  • Butter if you like.


You should also chuck in half of the Big burly handful of chopped fresh herbs (I used rosemary, sage, thyme and marjoram. Oregano would work too. If you're using dried herbs, I'd say about two or three level teaspoons, but be cautious);

Leave this at a lively simmer for twenty to thirty minutes.

Meanwhile at the dumpling bowl . . .

The other half of the herbs is destined for the herby dumplings, for which you will also need:
-Six ounces of self-raising flour
-Three ounces of reduced fat/ vegetable suet (You could use meat suet but it's made out of hooves. Yes it is.)



Mix these together in a largish bowl with the herbs, and then - when your stew's been boiling for twenty to thirty minutes - blend with about seven tablespoons of cold water.

Get your hands all floury and shape the dumpling mixture into about twelve balls and distribute evenly across the top of the gently bubbling stew.

Put a tight-fitting lid on it and leave for twenty minutes. Peep in now and then to make sure the stew is still bubbling gently.

We tried this soup with Doris Day, which was all wrong. You need something less peroxide - magnificent as she is. We enjoyed June of 44's Four Great Points album and later the Tindersticks album with 'Tiny Tears' on it.
